LIPIDS ......... needed for protection, insulation, cell membranes, energy source

STRUCTURE
made from ......
FATTY ACIDS
lipids – substances which do NOT dissolve in water – 2 types:
SATURATED fats
= FATS
solid at room temperature
- maximum nº of Hydrogen atoms
- too much saturated fat linked to heart diseases

UNSATURATED fats
= OILS
- liquid at room temperature
- have room for more Hydrogen atoms
- less problems for circulatory system (arteries) than saturated fats
FUNCTIONS
helps to:
- protect & cushion vital organs + joints i.e. reduce damage from bumps or falls
- insulate the body i.e. stop the body losing too much heat
- make cell membranes
- high energy source: provides much more energy than carbohydrates
- allow fat-soluble substances to be transported + absorbed
e.g. Vitamins A, D, E, K
SOURCES:
SATURATED FATS
UNSATURATED FATS
foods containing lots of saturated fats:
beef fat
egg yolks
dairy products ...
foods containing lots of unsaturated fats:
olive oil
peanut oil
sunflower seed oil....
